Whole Farm Cuisine

Our sustainability-focused practice of “Whole Farm Cuisine” means that we strive to use everything that our farmers produce. This includes featuring “rotation and cover crops” (legumes, barley, clover, spelt, and mustard greens) in an effort to ensure that nothing goes to waste. We seek to use ingredients grown by farmers who are dedicated to the goal of enriching and maintaining sustainable and healthy soil. Farms with fertile, nutrient-rich soil produce distinctive and flavorful products for us to showcase.

Dock to Table

Our seafood is strictly “Dock to Table,” where the seafood used at The Roundhouse was both caught and brought back to the dock the very same day. It is then carefully selected and shipped to us straight from the docks. This enables us to receive our seafood days before the markets do, making certain that our dishes feature only the freshest, highest quality seafood. All of our seafood is sustainably caught and we never use endangered or scarce species.

Nose to Tail

We source our meats from humanely treated animals that are grass-fed and pasture-raised without hormones or antibiotics.  We are committed to cooking with a “Nose to Tail” theory, using the whole animal and not just “cherry-picking” the prime cuts, the way most restaurants would normally do. This approach reduces waste, maintains livestock, and respects the life of the animal. This allows us to create dishes that are better for you, the farms, the animals, and the planet.

Local

Ninety percent of our products are from the Hudson Valley and we ask for you to join us and our commitment to local ingredients and the practices that we preach. We suspect there may be some items on the menu that you have never experienced, or even heard of, before. With that in mind, we strongly encourage you to be adventurous, to ask questions and be curious, with an eye to ordering something new and different. If you do not care for the dish we will happily replace it with something else.
